Top-quality beauty has a million uses, and a few issues...My favorite dish to make with this pan is a large omelette for two to four people. You saute the onions, etc., until carmelized, then add the whipped eggs, top it with diced tomatoes, basil, oregano and cheeses, then broil at about 450 for a couple minutes until browned. Simply wonderful!
I also cook stir frys, poach fish, bake casseroles, and brown meats in this truly Everyday Pan.
Now, for the issues: As with all true Calphalon products, you can not put hard-anodized aluminum into the dishwasher. It will damage the surface, leading to pits and discolorations, and void the lifetime warranty to boot!
Second, this is not a nonstick pan. If you want nonstick, buy Calphalon Commercial Nonstick, the best ever made (The Commercial nonstick line has the more advanced LRS3 coating versus the much less effective LRS coating on the cheaper Professional Nonstick II line).
To clean, simply buy a Dobie pad or its equivalent. For the tough stuff, I find a little Bon Ami or Dormond cleaner does the trick without too much effort.

what CAN'T you do with this pan?You can clean these pans with abrasive cleansers like Comet. I used to sell them in a boutiquey store where they'd have come back in droves if we'd misinformed people on this point. Another reviewer expresses appropriate caution regarding putting them in the dishwasher--it's for dishes, silly, not knives of pots--but I do this on occasion and it would take regular dishwashing with powdered (sandblasted in there) detergent and lotsa stuff to bang the pans to really do a number on them. Discoloration is not the stuff of diminished utility.
Aside from the line being the most practical stove top option bar none, the pan is a dream. Not so shallow as an omelette pan, nor so deep as a wok, it does the range from stir-fry to saute, to bake and roast. I'd recommend this pan to anyone who maybe wants to start a cookware collection--it's so many pans in one. I used to sell this stuff (not on commission, mind you) to students with their first apartment. Moms and dads would express concern that the kids would ruin it--au contraire: you get a ten dollar pan and it'll be beaten to bits in a matter of weeks by the likes of careless ol' me, but you get a heavy, solid pan like this, they'd have to be trying to break it.
Cautions:
-Lower the heat if you're used to inferior pans. If you get this pan and find yourself saying, "It burns everything," you're conveniently forgetting who chose the heat on that burner.
-It's not non stick--and they *do* sell the best non stick--but it is highly stick resistant, especially if you LOWER THE HEAT.
-The handles can get HOT so be sure you're armed with a potholder of any sort.

BE CAREFUL!!!
You'll Be Glad There's a Warranty! Research Alternatives!!PROBLEM: The Anodized coating wore through to the shiny bare aluminum underneath in less than two years. Two other households we know of report similar situations. NOT GOOD! Aside from no longer having the cooking/cleaning benefits of the Anodized coating, aluminum is reactive with acidic foods and researchers are unsure of the health risks. We have, from day one, only cleaned the cookware with the recommended ScotchBrite Pads (Calphalon included a sample with our set) and cleansers. Our water supply's pH is neutral and the most acidic foodstuffs to ever occupy a pan was spaghetti sauce. Two years? What's up with that? We can now look forward to a lifetime (warranty) of packaging cookware and returning it for replacement every two years. Calphalon doesn't make it easy, either, folks. Unlike other major cookware manufacturers we've experienced, Calphalon WON'T ship warranty replacements first, allowing you to return your pans in those shipping containers. You have to provide both the shipping containers, AND pay shipping costs, both ways (Many manufacturers ship replacements first, provide return labels, and have UPS pick up returns at your door, prepaid- at these prices, Calphalon should provide this service). ADDED BONUS: the customer service reps we dealt with were not particulary pleasant or courteous. Calphalon is not exactly giving this stuff away, either. Based on the poor durability of the coating, the caliber of the customer service, and the draconian return policy, we recommend investigating the ALL CLAD alternatives. You'll be glad you did!
Top Notch CookwareThat said, this is a superb set of cookware. I purchased a 10 piece set when the cool-v handles were first released, and have not returned one yet. (I didn't get the 10 in' omelete, or the 1 1/2 qt sauce pan - I wouldn't use them anyway. They're just fillers.) They heat evenly and quickly, and have worn very well under very heavy use. I entertain large groups often. You should not need to use a scotch brite pad every time you cook if you're doing it properly.
If you're not willing to learn to cook with these pans, you're probably averse to learning to cook well anyway. Please feel free to run on down to a department store, and get you a nice cheap set of junk that you'll have to replace in a couple years anyway. As for my pans and I...we'll be here for about 50 more years.

Disappointed by Calphalon steak knives
Stylish and practicalAs with any knives, hand-washing is better for the blade, but these have weathered the dishwasher with no trouble.
Overall, for the price and the look, I am highly satisfied with the set.

Condensation & Water Collection
Unusual mineral leakage/depositThis is one of several kettles I've owned and by far the most one. I thought by putting more money into it, I'd get a better quality product. It's back to shopping for a better one.
Problems!
One note: you may want to check on your cup cakes / muffins a couple of minutes early. I have noticed that cakes are done a little quicker in pans with a dark finish. Many newer recipes will indicate the timing for dark finish bakeware. These pans are also a breeze to clean, just a little soap and water and you are done. Wonderful Pans! Highly recommended!
