Carving Knives Reviews

I eat a lot of Italian cold cuts like prosciutto, which has to be sliced paper thin. Until I got this knife last year, I have been using an electric slicer (a commerical one like those in a deli) to do the job. With some practice, I can slice ham with this knife almost as thin as the machine and it is a lot easier to clean it then an electric slicer. I also use it to slice meat and fish often. The rounded tip makes it easy to work with, at least for me, because the sharp tip of a typical 10 inch slicer makes me nervous. Lastly, the blade is quite flexible and it took me a little while to get used to it.

This is an excellent knife given the right conditions. If you find yourself cooking large roasts of any sort, this is the knife to carve with.

This thing goes through prime rib like no other knife I've ever used. You want paper thin beef? Done. Big honking thick slices of beef? Done.

The one drawback of this knife is when you are slicing near bones. It's a pretty stiff knife and very long with a blunt tip. If you want to get the tender little bits from the bone, get another knife out, or plan on getting your hands dirty!

I'm currently a culinary student. Most of my fellow students use Henckles products for their prestine quality. I found this carving knive to have these same qualities. The other day I went through a roast with no problems. Another good thing I've noticed about Henckles products are they keep sharp extremely longer than most of thier competition. BUY THIS KNIVE

This is an excellent all-around knife. Slices extremely well on meat and vegetables. This 4-star handle has a great feel. The pro-s handle is okay, but I do not like the 5-star handle.

I would have given this carving set 5 stars if it was not for the box. Perfect knife, nice fork (the fact that the fork fits in a regular knife-block slot is certainly a plus when compared to Wusthof forks).

Anyway, one of the main reasons I bought the set from Amazon was the presentation box. Sadly, like most well designed but poorly made things, this box has the gold and black label which reads "made in China".

It would have been great if we were allowed to post pictures of the products to show the way we received them. Well, the main wood block was loose (I guess it would be to much to ask for quality control in some places) and the velvet was ripped off in a place and scratched in a few others.

I repaired the box (as much as possible) and it looks okish now. Anyway, do not buy the set because of the box - you might be in for an unpleasant surprise. Some may have better luck and get a nicer box; as I said, the design is good, just the quality of these things is probably random.

Henckels makes a great knife and this set represents a great value. If you like a heavier knife, go with a Wustof. If you favor a lighter set, this is the one.
