I am lucky to have built a core collection of kitchen knives, and this is an outstanding slicer. The weight is light, the control delicate and this knife is a pleasure to use in every way. While a big Chef's Knife can be heavy and wieldy to use for significant kitchen duty, this slicer is long, sleek, agile and completely effective as a top of the line performer for the culinarily inclined. A college chum once didn't feel worthy of a particular tool he had purchased - if you are devoted in a culinary way, make a few core tools your partner for life and pay them respect through devoted use and care.

A few essential tools make any loved activity something close to art, why should a connection to food be any different. To see any devoted person performing their loved rituals, their work can seem effortless. A few of these Sabatier Carbon Knives have become my set of basics - they don't have to be the most expensive, the shiniest, the most widely recognized name. I have always sought the tools that empowered me to perform the task at hand as elegantly, and as effectively as possible, with the least interference from human-made "stuff". Honestly, this slicer may or may not bring out the Errol Flynn in you while in the kitchen, but it is certainly what I would classify as an elegant knife. When you have need for a slicing knife, few knives are as beautiful as they are effective.

Simple. No compromise. Powerful, basic tool. Rounds out any small essential array of kitchen knives, or becomes a prized solution in a well appointed kitchen. Treat yourself - enjoy this knife for a lifetime. Steel with each use!

A Fabulous Knife
I my opinion the pleasure of using high quality tools far outweighs the troubles of the work of maintaining them. And this knife is no exception. It has to be sharpened frequently, but I actually find that easy to do because it takes the edge so much better than other knives.

I have owned one of these carving knives for about three years and it still looks good and works perfectly. The same goes for my 30 year old Sabatier carbon steel chefs knife.

Even though I am fairly careful with always handwashing and drying my knives after use the carbon steel ones do discolor over time and I find that I have to give them an extra cleaning (usally just with a nylon scour pad) every couple of months to keep them in a state that I like.

As a carving knife this one outshines every other knife I have worked with. With a bit of practice it makes it easy to make perfect thin slices of any piece of meat, poultry or fish. It is not an all-round knife - it is made for a very specific purpose and is not well suited for other things - if you are a vegetarian you won't need one of these!

This is the perfect tool for people who care about the presentation of their roasts and the fine balance between sauce and meat that can be obtained with perfect slicea.

A decent, affordable Sabatier knife
Sabatier is a grand old name in blades, but the current product line from Sabatier USA uses that fine name on a lot of lesser products. The Grand Chef series at least retains the classic Sabatier shape - a bit thicker in the spine and stiffer than most French blades, yet leaner and lighter than most German blades. Like the better Sabatiers, it's made in Thiers, France; it's forged of high-carbon stainless, with a full tang; the handle has pressed-on resin scales secured by three rivets. It's a nice compromise, which is why I bought it. The balance of this slicer is just forward of the bolster, and it sits well in the hand. The fork's straight, forged tines seem designed more to poke into the meat for stability, rather than holding it in place with downward pressure - I prefer slightly curved times. If you use a slicer only occasionally (say, a dozen times a year or so), and want the control a stiffer blade gives you and the smooth slicing through finer-grained meats that a French shape gives you, then this is a good set at an acceptable price. If you like the shape but use a slicer a lot more, then you might consider a Thiers-Issard. If you use a carving set only a couple times a year, you'll probably be just as happy with a cheaper set from a different maker.

Well Made, but only Fair Performance
Quality construction, thick blade is rigid, but does not slice as well as the Henckels and Wusthof.

sabatier high carbon stainless knives! WOW
of the many knives ive used in my years of cooking both profesionally and at home I've come to much prefer the Sabatier High carbon stainless knives for there balance and ability to hold and edge. These knive are truely for the person who conciders culinary preperation an art form

junk worthless
the steak knives are butter knives and the carving knife is as sharp as a brick: pure junk I have thrown it all in the trash!

Don't bother.
I bought this Sabatier product because it had not been rated. After reviewing many of the other poor Sabatier product ratings that were also made in China, I gave this product the benefit of the doubt and just purchased it. The carving knife is absolutley dull. It has no sharpness. I ran it down my finger to assess its sharpness, but it did nothing. I highly doubt it would be able to cut your meat either. The steak knives on the other hand are a bit better. Although there are some ridges on these knives, they still don't seem sharp. They are rather rough than sharp. I actually haven't tried this set. This rating is based on what I can see and feel. I am going to return this product immediately. I do not plan on wasting my[money]. Have a good day!

Very good buy for what you get!
I bought this set first because it was so cheap compared to what I saw at the store, and I just wanted a starter set for my new apartment. They are actually really cool looking...modern stainless still look going on. They are not high end fancy knives but for the money I really like mine. They look cool and expensive when I pull them out for dinner!
