Perfect For Seasoned Carvers or Beginners!
I recently bought this set for my first big Thanksgiving (fyi: this is a very good price - I paid $30 more at a kitchen wares shop in NYC that is noted for low prices). It's awesome!

My boyfriend had never carved a turkey before, and with all the work I put into that bird, I didn't want him to hack it to pieces. He did a beautiful job and credits this knife set with the results. The knife was easy to handle, exceptionally sharp (first use, but if you have your knives professionally sharpened a couple times a year - it costs just a few dollars a knife - they will stay in peak condition) and well-designed. The knife back has a saber-cut; purely cosmetic, but a nice detail. The weight felt comfortable both in my feminine hands and my bf's larger manly-man hands.

The curved prongs of the fork made it easy to hold the bird in place without puncturing the flesh, and worked just as beautifully when spearing pieces of meat to carve or serve.

The presentation box might seem extraneous, but it is actually a great way to store and protect the set - most of us don't use carving knives and forks every day.

I generally use Global knives, but I told my Knife Guy I wanted the best - and this is what he recommended. Absolutely worth the money, and a great performer.

Wüsthof Curved Fork
As a longtime Wüsthof-Trident collector, I've acquired both their Classic Curved Fork and their Classic Straight Fork. I use the curved fork for turning pot roast that is being cooked in a Dutch oven, as well as for lifting roasted meat, game, and poultry from a roasting pan onto a carving board. I also use a tine of this curved fork to pierce roasts for checking the color of their juices as a test for doneness. This fork is made to the same specifications as the Classic line of Wüsthof knives - it has full-tang construction, meaning that it's forged from a single blank of high-carbon, no stain steel, and it has the traditional triple-riveted design. The handle of the curved fork feels balanced in my hand, so I can use it to turn and lift roasts with ease. The tines of this 6-inch fork are 4.5 inches long, and their curve has been ergonomically designed. This fork is not really suited for carving roasted meat, poultry, or game. It's much easier to use a straight carving fork inserted into the roast to pinion it and then serve as a guide for the carving knife. Wüsthof makes an 8-Inch Curved Fork, too, so if you're going to be lifting and turning large heavy roasts, and you have large hands, you might want to look around for that one. I hand wash and dry all my Wüsthof forks and knives, but the manufacturer states you can wash this fork in the automatic dishwasher.

The finest in profressional carving sets

Good Knife, But Do You Need It?
There are really two main competitors in the high-end mainstream kitchen knife market: Henckels and Wusthof. Those who have used both usually have a preference. My preference (and therefore bias you should know about) is for the Wusthofs.

The Wusthof Classic line is the more conservative counterpart to the Grand Prix line. The only difference, however, is the handle style. I personally prefer the Grand Prix, but this is an issue of personal preference. The balance and grip of these knives are as close to perfect as I have found. For those wondering what benefits a higher priced knife provides, one benefit is that the blade (or tang) is one piece all the way through the handle. This makes the blade much stronger, and less likely to snap.

This particular model, the 8 inch carving knife, is a good knife, but I find its uses to be few. For chopping, the chef's knife or utility knife are more useful. This knife is too long and thin for chopping; its balance isn't right. Therefore, this knife is really limited to carving meats. For most cooks, this is an expensive knife for a rare job. If you are completing your collection, I recommend this knife. If you are starting a collection and looking for an all-purpose knife, I would recommend the 8 inch chef's knife or the 4 ½ inch utility knife.

I quite nearly gave up on cutting before I was given this superbly crafted knife. It was a wedding preseant. I only wish I had known then that this knife and my wife's tongue had this in common: sharp. Between her biting sarcasm and this knife's steely coldness I've had a number of silent meals consisting of well-trimmed meats.

I wish my computer could make umlauts so I could thank you propperly, Wusthof.

Excellent Carving Knife
As a longtime knife collector, I've amassed a large assortment of knives, including over 40 from the Wüsthof-Trident Classic line. I own a few carving sets and an electric carving knife, but this Wüsthof Classic 8-Inch Carving Knife is my old stand-by for carving roasted meats, poultry, and game. The reason I prefer this carving knife over all others is that it holds its sharpened edge beautifully, and it has the perfect heft and balance for my hand. For specialty carving and slicing needs, however, I do use my Classic knives with the Küllenschliff edges, such as the ham, salmon, and roast beef slicers. When carving, I pinion the roast on the carving board with my straight carving fork, then slice alongside it, and use the knife tip to carve around bones and lift off the carved meat slices. I've found that this carving knife is ideal for all general purpose carving. It's very easy to keep it well sharpened by using Washita Arkansas whetstones and honing oil or by using a Chef's Choice 3-Stage Diamond Hone Professional Sharpener. Before each use, I always hone it with a honing steel. I hand wash and dry it, as I do with all my Wüsthof knives, and keep it stored in a wooden block.

I was given one of these forks as a gift. It is a fabulous fork. The reason I gave it only three stars is that I recently bought a Calphalon knife set, and it came with a fork that is in every way the equal to this fork, yet even as an open stock item, costs a fraction of the price. If you must have the name, buy it. On the other hand if you want the best quality, and value your money.... there are alternatives.

Not too shabby!
Let me tell you folks, when my late husband received this fork as a gift from one of his clients, my first thought was, "Return it and let's get the cash!". Luckily we kept it around long enugh to realize what an asset it is to our kitchen. This fork has two prongs which is perfect for any job you would want it for. Our cook, Frances, just loves it, and refuses to carve with anything else. In fact, I just bought him one for his own family for Christmas! What can I say, I know how to treat my staff!

AMAZON.COM REALLY SCREWED UP
I thought this would make a nice Christmas gift so I purchased 3 of them several weeks before Christmas. The stock available showed 5 at the time. A week before Christmas, I received a email from Amazon saying the item was back-ordered. Called their support and found out that the items "should" be there by Christmas. Although I panicked through the week, I eventually received all 3 on Christmas eve. But the situation got even worse, it turns out that they sent me the cheaper gift set with the aluminum box and not the wooden one. Called their support back and they said that they had no more of the wooden gift boxes left so they sent the aluminum ones. Since these arrived at 6 p.m. on Christmas eve with no time to go out and find some different gifts to give, I had to keep the 3 screwed up sets that Amazon sent. Thanks again Amazon for making this holiday one of the worst for me.

A Beautiful Carving Set!
I too purchased this carving set as a Christmas gift and received the aluminum box instead of the advertised mahogany-stained box. I contacted Amazon about the mix-up and they immediately sent me a replacement, which also included the aluminum box. But I am not really that disappointed, the mahogany-stained box would have been cool, but the aluminum box is still very nice and holds the carving set securely. The important item, the carving set itself, is just beautiful! I am not a connoisseur of fine kitchen utensils, so I did some research before purchasing. Wusthof has been making quality cutlery for years and almost every review I have seen gives their items the highest of marks. I am especially impressed with the craftsmanship of the Classic series. The blade and tang are one continuous piece of forged steel, so it feels very solid and balanced. The grip is comfortable and the knife cuts extremely well. The price may seem a little high for something that you might only use on holidays or special occasions, but this is a set that will last forever and can be passed on through the generations. You get what you pay for. If I carved more turkeys, I wouldn't hesitate to buy a set for myself!
