Great knives !
These are real knivesThis time of year (late summer/fall) in the northeast is tomato time. The 6" utility knife and the parer are tremendous with tomatoes and they just slide through slippery onion and pepper skins. Makes me feel like I know what I'm doing.
Can't wait to cut up a pineapple, or to cut the skin and fat off of a chicken breast with these knives when doing the same with my old knives was a harrowing experience.
Different kitchenware sites recommend using a magnetic strip to hold knives and we've used one for years, but I bought a Henckels block for these knives so that they wouldn't scratch.
I have found that they do show scratches easilly, like when using the scouring side of a two sided sponge (some light scratches on the parer). This in no way effects thier utility, but I'll be careful in the future. You really should use a soft cloth to wash them (as recommended).
For the holidays (it's my job to carve the turkey), I plan on buying the carver.

1st problem ever encountered with a Pro-SDon't get me wrong the Henckels Pro-S is still the best knife you could buy, but I was astounded that quality control missed this defective blade. I thought I would never have to make use of the lifetime warranty (especially 3 days after buying a set). But hopefully the exchange will go just as smooth as these excellent knife cut though food.

Not for pros or heavy usersI am not disputing the quality of Henckel knives! I love them. In fact, I encourage anyone to buy them... Just buy the GOURMET series, which is what any real professional uses. They'll last until the day you die, they are far less expensive, and they wear EVENLY. Unless you are just buying these for show and you want to look cool...then by all means, buy the pretty knives. Just try not to sharpen them more then a couple of times for the rest of your life.
Superbly sharp and well-balanced
I cook for a living...If he has been a professional for 14 years then he should have learned the term "bolster" by now...and he should have been able to sharpen his knives properly without wearing the edge out...he's probably using an electric sharpener or sending them out. The culinary school reference is questionable also...Le Cordon Bleu uses Mundail knives...etc.
This a top of the line set and shouldn't be maligned out of ignorance. If you learn how to use the steel that is provided and a good fine stone then these will last you a lifetime.
