Useful but not a replacement for a sharpener...These tools are excellent for what they do but they dont sharpen, per se. As the knives are used the blades lose their *straight* edge...you cant see it with the eye but it effects cutting. These will perfect the edges between uses, and probably prolong time between sharpening a bit but they wont make a dull knife sharp.
This is a very good model. I dont have any experience with any other ones. Many appear quite similar so its hard to know at times what makes one better than the other. This handle is very comfortable to use. Solid when you are holding it in one hand, and a knife in the other.
Personally, it isnt something I find totally necessary in the kitchen but i know many do. For them this would be an excellent product
Great Steele - but a little long for most blocks.
Useful but no substitute for a sharpening stone or sharpenerIt's good to get a pro to show you how to sharpen a knife and set an edge.
If you do it right,when the knife is properly sharpened and set, you can slice a piece of paper easily, as if with a razor. If the edge is set wrong, the paper won't cut or will saw unevenly.
So after you sharpen the knife, use this steel to get the edge set exactly right. It puts on the finishing touch and makes a real difference.

I love it BUT...One needs to apply constant, medium to light pressure as you draw the blade through the sharpening wheels. You want to achieve a smooth stroke without allowing the blade to chatter as you draw it through. After some medium-firm strokes, test for sharpness. If it's enough, then draw the blade through lightly a few times to help hone the edge. Then follow with a few strokes on your steel to have a perfectly smooth finish.
Once you master the right strokes, this is a most wonderful kitchen addition. It's handy and easy to use. No more dull knives! I'd happily buy another when this one wears out.

Better than nothing
Have reasonable expectationsDoes the sharpener make dull knives sharper? It certainly does, in just a few minutes. Does it make them sharp enough for routine use? I would say yes; I am not a professional chef, but I find that I am much happier with the performance of my knives after sharpening. Does it return them to their factory degree of razor sharpness? Unfortunatley, no. I think there is no question that my knives were sharper out of the box than I can achieve with this hand sharpener. But that does not mean that this was a bad purchase. It has restored my knives from being a bit dull to being perfectly adequate for the use they get in my kitchen.
If you want to achieve like-brand-new razor sharpness, this sharpener will not do that for you. If you want to bring your dull knives back to a degree of sharpness that will be adequate for 99% of home cooks, this would be a good item to have.
Great for all knivesIt took some time with the steel wheels to clean up the edge on the cheap knives, much more than "5 passes", but once I got the edge down and nicks out, the ceramics gave them terrific edge. Almost a month later the edges are holding up great despite heavy abuse and constant runs through the dishwasher (dishwashers take the edge off of knives - hand wash), since I have no control over the abuse my coworkers dish out.
I am really looking forward to using these to clean up my personal knives out home, as soon as I get them out of storage.
