Wüsthof Bird's Beak Knife
This Wüsthof-Trident Classic Bird's Beak Paring Knife is in my top ten list of most-used kitchen cutlery. I like this handy little curved knife for peeling and paring most fruits and vegetables, except potatoes, which I prefer to peel with an OXO peeler. If this knife is kept sharp, it can even be used to take the rind off of citrus fruits. If you like to make decorative food items or garnishes (like radish roses and carrot curls), or watermelon baskets or sorbet-filled oranges and lemons, then this is the knife for you. (A small fluting knife also comes in handy, too.) I hone mine with a steel frequently, and I also have it sharpened professionally as it doesn't sharpen well with the Chef's Choice electric sharpener. If you buy a set of Wüsthof knives, and this one isn't included, you'll want to add it to your collection. Also, I hand-wash and dry this knife and keep it stored in a wooden block.

The knife most often used in our kitchen
Handy size, good workmanship, and excellent steel make this a choice item, despite its relatively steep price. Before the advent of the yuppie housewares craze, Wusthof goods were much more reasonable relative to other brands, and a real bargain, but the BEST knives in our kitchen are American made, not stainless, and unfortunately no longer made. Such is "progress".

A superb knife
I received this paring knife (included in the course fee) when I took a Wusthof knife skills course at a local shop. It's everything a knife should be - sharp, solid, well-balanced, and a comfortable fit in the hand. Wusthof got the proportions of the classic-style handle about right; not too fine, not too chunky... just right for comfort and control. After the course I gave it to my mother, who was surprised at its sharpness. (I already owned a Henckels Pro-S 3" paring knife, which has a slightly longer handle... IMO the two knives are similar in quality.)

This is also the knife that inspired a friend who finally bought one to exclaim, "I'm surprised you didn't say, 'You call that a knife????? THIS is a knife!' when you were using my (old, stamped, serrated) knives!" She now understands my addiction to forged German steel.

As always, it's best to try several knives in person and see how they fit your hand before buying, but it would be hard to go wrong with this one.

Wusthof Classic 3 1/2 inch paring knife
This is a great addition to any kitchen. I think it will last for the rest of my life! Soon I hopefully can add more of this brand to our kitchen. I highly recommend it!

Quality makes a difference
I've got a cheap-o chef's knife and I've got this little 3 1/2" Wüsthof paring knife. It's a testament to the quality of the Wüsthof that I'd rather use it, even for big knife jobs like chopping vegetables or cutting meat. The quality of the blade more than makes up for the lack in size.

Wusthof knives are a bit pricy but top quality. Definitely a step above henckles.

Ultimate Bar Knife
If you are going to have one knife at your Bar this is the knife. It is the perfect knife for cutting up lemons and limes into wedges. It was like it was just made for that. Because the knife is serrated you never need to worry if it is going to be sharp. I also use this knife for cutting small fiborous vegtables as well. I would highly recommend this knife. Cheers!

"That's my knife"
This is a gem of a knife. It is new to me, but I already know that it will be the knife that I use most. It is razor sharp. The handle is very comfortable; feels like it was tailor made to fit into your hand. You know how most of us have a favorite kitchen knife that we use over and over again and we would go absolutely ballistic if somebody were to take our knife, well this is that knife. I have had several paring knives and this the the best by far. Amazing how something so small can bring such joy!
