Not Perfect But Nice for the PriceSo, the knives are dirty and scratched as I mentioned. I cleaned them via a good hand washing and that took care of the dirt and some of the minor scratches.
Now I notice the knives are not uniform. The handles are not joined perfectly as I'd expect from French made Sabatier knives.
On the bright side these knives are pretty much the same Laguiole style steak knives you'll see in top restraunts. They are the sharpest steak knives I've seen and except for some minor defects are quite nice visually.
I ate at Boulevard in San Francisco a couple nights ago and I noticed they use very similar knives which were in much worse shape than the set I got so cheaply at Amazon. So, I figure these knives with a few scratches are probably good enough for my table... will give this deal four stars.

Don't confuse these Sabatier Laguiole ones with Laguiole!I think these are the ones that are being rated lower *NOT* the Laguiole ones (Laguiole - not Sabatier - makes their own Advantage range; these are the dishwasher safe ones that look similar to these BUT w/a huge price difference!). ...I don't know why/how Sabatier ended up having a Laguiole line of steak knives/tableware.
Also - FYI for some of the reviews that I have read elsewhere criticizing the funny shape of these knives... French knives are NOT designed like German knives (like Wusthof)! This is much more true of kitchen knives than steak knives, but French knives are usually much more sleek and triangular than their German counerparts. For the kitchen knives, it means you use a different motion to cut (you slice rather than rock) b/c the bolster is different and you can cut higher up on the blade (use more length). B/c of that, it also means that when you sharpen the French knives, you will be sharpening the entire length of the knife. If you talk to a professional cutlery expert, you can get more clarification.
As such for these knives, Sabatier makes good knives (esp. if you buy the Thiers-Issard ones of theirs (a few hundred of $$ for a set of 6) and Laguiole make killer knives. However, these aren't either one of them...
